Pumpkin Pie Overnight Oats

Vegan and gluten free, this recipe is so delicious, convenient, healthy, creamy and tastes like pumpkin pie!

As fall hits, we crave less of the cold fruit smoothies. Overnight oats are super handy to have in the fridge. They are truly perfect for breakfast, snack or to take on the go!

Oats are a nutritious whole grain, rich in antioxidants, vitamins, minerals and fiber. Particularly when oats are soaked overnight, they are great for digestion, allowing your body to absorb more of the nutrients that they have to offer. Some other health benefits include weight loss, lower blood sugar levels, and reduces the risk of heart disease. In addition, oats lower cholesterol, and contains more proteins and good fats than most grains!

So many varieties and arrangements can be made from this recipe. However, we’ve decided to kick off the season with pumpkin and spices!

Ingredients:

  • 1C Rolled oats (GF) or Steel cut works too
  • ¾ C Mylk of Choice (I used almond mylk for this recipe)
  • 1 tbsp Chia Seeds
  • ½ C Pumpkin Puree
  • 2 tbsp Maple Syrup
  • 1 tbsp Brown Sugar (optional)
  • 1 tsp Pumpkin Spice ( ¼ tsp cinnamon, ¼ tsp ginger, ¼ tsp nutmeg, ¼ tsp cloves)
  • Pinch of salt

Toppings:

  • Apples
  • Pumpkin Seeds
  • Pecans
  • Craisins
  • Raisins
  • Cinnamon sticks

Instructions:

  1. Combine oats, mylk , chia seeds together and leave in refrigerator overnight or at least 4 hours
  2. Combine pumpkin, spices, salt and maple syrup together
  3. Layer pumpkin and oats mixture and dress with your preferred toppings!

*You can combine all ingredients in jars and leave overnight for quick preparation.
