Shortbread cookies are one of the easiest things to bake. To keep it nice and simple, we’ve even kept any type of butter out of this recipe.
We are a true believer in minimal ingredients! With the following 7 ingredients, we’ve created a tender, flakey, chocolatey shortbread cookie with the perfect combination of bitter and sweet.
Great for gift giving or a uplifting treat for yourself!
Makes 7-8 2inch Heart cutout cookies
Prep time:10 minutes
Bake time: 30-35 minutes
Ingredients
- 2/3c All purpose flour
- 2tbsp Cocoa powder
- 3tbsp Beet sugar
- Dash of Salt
- 40ml Avocado oil
- 1-2tbsp Water
- 30g Vegan Dark Chocolate
Directions
- Grate chocolate, set aside
- Put flour, cocoa, beet sugar, salt in a bowl and mix
- Add avocado oil and use both hands to “rub” the flour and dry mixture together well (this stage is quite important to attain the nice flakey texture of shortbread)
- Add 1tbsp of the water to start as the dough comes together
- Fold in chocolate with hand
- Add remaining water if needed to bind dough
- Sprinkle a little flour or cornstarch and Roll out dough to about 8mm thickness and cut out shape
- Place on a baking sheet with parchment paper and poke a couple of holes in each cookie
- Bake at 320•F for 30-35 minutes
- Cool completely on the baking sheet
