Sushi Without Rolling- One Cup Sushi
Vegan, Gluten Free, Easy to Make, Modern Sushi
This recipe is a fun modern take on the traditional sushi. We made it super easy and simple, since you don’t have to cook any ingredients other than the rice. Also, you don’t have to roll! This healthy, quick recipe can be arranged to your tastebuds and what’s in your fridge!
Cook/prep time: 5-10 minutes after rice is cooked
Makes 2 servings
Ingredients
- 2/3 c Cooked short grain rice (brown or white)
- 1/2 tsp Rice vinegar
- Pinch salt
- Pinch beet sugar (or sugar of choice)
- Dab of avocado oil or olive oil to line with measuring cup
- Half Avocado chopped (ripe works best)
- 1/3 c Diced Cherry Tomatoes
- 1/3 c Diced Smoked Tofu
- 1/3 c Diced Cucumbers
- 1/3 c Chopped Greens
- 1 tsp Tamari soy sauce to pour over before eating (Sesame dressing is delicious too!)
- Garnish of choice (Kaiware, nori, red peppers, green onion, sesame seeds etc.)
Directions
- Cook rice accordingly
- Mix hot rice with rice vinegar, salt and beet sugar, set aside
- Line a 1 cup measuring utensil with a little oil (use whatever works)
- Divide all ingredients into two piles
- Start with cucumbers
- Press avocado in between the cucumbers
- Place Smoked tofu in followed by Tomatoes and Greens
- Lastly, press half the sushi rice in
- Flip the cup over on to a plate and tap the top to release the avocado
- Slowly lift the cup
- Garnish and serve with Tamari soy sauce or Sesame dressing
