Recipe to Make Veggie and Nut Loaf
Vegan, Gluten Free, Meatloaf For Vegans/Vegetarians
Attention Vegans, Vegetarians, Carnivores!! A true umami-loaded delight!! The super Veggie and Nut Loaf is a must try for all.
This loaf recipe is rich, chewy, has an incredible nutty texture, guilt free and satisfying to any taste bud!
It’s one of the most forgiving dishes out there. You can choose to add or omit your choice of nuts, veggies, cheeses, dried fruits, grains, beans and liquids.
Great for a holiday meal, or no occasion at all! Serve it up with your favorite veggies, mashed potatoes, cranberry sauce and our delicious MISO GRAVY RECIPE!
Makes 6-8 servings
Prep time: 20 minutes
Bake time: 90 minutes
Ingredients:
- 1 small Onion
- 1/2 c Celery
- 1 medium Carrot
- 1 c Mushrooms of choice (Shiitake, white, crimini)
- 2 Cloves finely chopped garlic
- 1 1/2 c Nut blend of choice (Almonds, cashews, pistachio, pine nuts, walnuts, pecans)
- 3/4 c Almond milk (soy milk is fine)
- 1 1/2 c Gluten free bread crumbs
- 1 c Cooked brown rice (short grain works best but other grains such as quinoa, kamut is delicious too!)
- Dash red wine or sherry
- 1/2~1 c Vegan cheese (optional)
- 1 tbsp olive oil to sauté vegetables
- 1~2tbsp Spices of choice (fresh and/or dry) Some that work great in this dish are: oregano, sage, cayenne pepper, paprika, basil, rosemary, parsley, thyme, nutmeg, all spice, tarragon, salt and pepper
Directions
- Heat pan with olive oil
- Sauté chopped onion until soft (approx.5min)
- Add carrots, mushrooms, garlic, celery and dried herbs. Sauté 5 more minutes
- Add red wine until reduced. Contents should be moist, not swimming in liquid. Stop heat, set aside
- Line loaf pan with parchment paper, set aside
- Put nuts through food processor until pieces are small
- Also put mushroom mixture through food processor as well until chunky, small pieces
- In large bowl mix nuts, mushroom mixture, bread crumbs, rice, vegan cheese, almond milk, fresh herbs until combined
- Place mixture into the loaf pan and decorate with slices of mushrooms, while nuts and or herbs
- Bake at 350 F or 175 C for approximately 90 minutes
- Rest for 10 minutes
- Serve on a platter with your favorite vegetables and sides! Great with our MISO GRAVY RECIPE
*if you don’t use a loaf pan, you can make individual sized patties and bake on a baking sheet lined with parchment paper (you may only need to bake 60-70 minutes)
