Burdock Sesame Cheese Puffs Vegan Gluten Free

This recipe has been proven to be such a treat! It’s super easy to make, a great snack, appetizer, side dish, breakfast and an absolute hit at any party.

Manioc flour, Cassava flour, tapioca flour comes from the tuberous root in Latin America. This pure starch is gluten free, nut free, grain free, and nearly protein free. In western cultures, this flour is commonly known to be the key ingredient in the Brazilian cheese bread, Pao de Quejo.

We created this recipe by combining another root vegetable commonly used in Japan, burdock or Gobo. The Burdock root has antioxidants, disease preventing and several health promoting properties. Although the star of this recipe is the gelatinous, chewy texture that the Manioc flour contains, the crunch of the Burdock really takes it home. The combination of the cheese, soy sauce, burdock and sesame seeds really bring the “Japanese flare”.

Bake time:20 minutes

Makes 10-12 in mini muffin tray

Ingredients

  • 2/3c Grated Burdock
  • 1 tbsp Sesame oil
  • 1 tsp Tamari Soy sauce
  • 1 tbsp Ground sesame seeds
  • 1 1/2 c Manioc Flour (Tapioca Flour)
  • 1/3 c Olive oil
  • 1/4 c Water
  • 1 Egg replacement
  • 2/3 c Rice milk
  • 3/4 tsp Salt
  • 2 tsp Crushed garlic
  • 2/3 c Grated vegan cheese of choice

Directions

  1. Peel burdock and grate approximately 2/3c
  2. Heat sesame oil in skillet and pan fry burdock on medium low until the moisture is gone and cooked through (2minutes or so)
  3. Add sesame seeds and tamari soy sauce and pan fry for another minute
  4. Stop heat, set aside
  5. Beat olive oil, water, rice milk, and salt with a hand mixer
  6. Gradually add egg replacement and Manioc flour in while mixing
  7. With a spatula, fold in cheese, garlic, and the burdock
  8. Spoon into mini muffin tray right to the top (on a baking pan works too)
  9. Bake at 375•F for 20-25 minutes
