This recipe is the ultimate health conscious meal! The delicious, nutty flavor of the soba noodles is the star of this dish.

Buckwheat noodles, or soba noodles are made from buckwheat flour. They don’t only satisfy your taste buds but your whole body! Soba noodles are fat free, gluten free, cholesterol free and are a good source of nutrients like manganese, lean protein, iron, fiber, carbohydrates and thiamine. Also rich in phytonutrients, antioxidants that can prevent a variety of diseases.

Add your favorite fresh vegetables to the soba noodles and you have a super salad! Please arrange this recipe to your liking by putting in ingredients you enjoy most. Add smoked tofu for more protein, or change up the dressing depending on what your preference is that day!

Ingredients

  • 1 bunch (60g) Soba noodles
  • 1 c Leafy greens of choice (kale, spinach, lettuce etc.)
  • Fresh vegetables of choice (avocado, peppers, cucumbers, red onion, carrots etc.)
  • Cilantro to taste
  • 1~2 hot peppers

Directions

  1. Cook soba noodles according to package instructions strain through cold water, set aside
  2. Julienne or slice all your vegetables
  3. Make dressing
  4. Put everything in a large bowl and toss with dressing
  5. Plate, garnish with cilantro, hot peppers, nuts and enjoy!!

Ingredients for Sesame Ginger Dressing

  • 1 tbsp Tahini
  • 1~2 tbsp Tamari Shoyu
  • 1 tsp Apple cider vinegar (or rice vinegar)
  • 1/2 tsp freshly shredded ginger
  • 1 tbsp Lemon or Lime juice
  • 1 tsp Sesame oil
  • 1 tsp Ground white Sesame seeds
  • 1/2 tbsp Mirin
  • 1/2 tsp minced Garlic (garlic powder is fine too)

Directions for Sesame Ginger Dressing

  1. Simply mix all ingredients in a bowl!
