Mille Crepes with Strawberry Tofu Cream

Mille Crepes is a classic French cake. Typically this layered cake is made from butter, eggs, heavy creams, sugar, white flour etc. We have created this recipe substituting such ingredients with healthier, natural options but keeping Mille Crepes’ dense, creamy, moist and flavorful array of textures in each bite. Our creation is truly delightful!

Prep/Cook time: 40 minutes (no oven time!)

Makes a 13x13cm cookie cutter sized cake with 12-15 layers

Ingredients for Strawberry Tofu Cream

  • 175g (1/2 pkg) Firm tofu
  • 3/4 c fresh strawberries (strawberry jam works great too)
  • 1 tbsp Avocado oil (grapeseed or oil of choice)
  • 1 Vanilla bean stick
  • 2 tbsp Maple syrup
  • 1 tbsp Brown rice syrup (maple syrup is fine too)
  • Dash salt
  • *add agar powder according to directions on pkg for a firmer cream

Directions for Strawberry Tofu Cream

  1. Rinse tofu in cold water and pat dry
  2. Add all ingredients together in a blender and blend until very smooth add additional maple syrup or brown rice syrup to achieve desired sweetness
  3. Place in the refrigerator while you make the crepes

Ingredients for Crepes

  • 1 c Gluten Free flour mix of your choice (we used brown rice flour, rice flour, buckwheat flour and tapioca starch to get the nice chewy texture)
  • 1/8 tsp salt
  • 1 egg replacer
  • 1 tbsp avocado oil (or oil of choice)
  • 1~2c soy milk

Directions for Crepes

  1. Mix all ingredients together but only 1 cup of Soy milk
  2. Add remaining soy milk to batter until desired consistency
  3. Heat hot plate or frying pan
  4. Make 12-15 thin crepes about 15cm round flipping when golden on both sides (make sure to use a little oil if not using a non stick surface)
  5. Cut each crepe with cookie cutter
    (You can use smaller cutter if making individual cakes!)

Cake assembly

  1. Layer crepe and cream until desired height
  2. Dress top with layer of cream and fruit
