This soy milk pudding is a great finisher for a meal on a cold winter day. Completely dairy free, it is a nourishing breakfast, or a tasty, healthy snack. It has the perfect amount of sweet and savory to satisfy your tastebuds.
Prep & cook time: Less than 10 minutes if rice is precooked
Makes 4 dessert servings or 2 breakfast servings
Ingredients
- 250ml unsweetened Soy milk or almond milk
- 1 cup cooked brown rice (short grain)
- 1 tbsp brown rice syrup
- 1 tbsp maple syrup
- 1/4 tsp barley miso paste
- Dash of salt
- 1/4 of a lemon (peel only)
- 1 tbsp organic raisins
Directions
- Bring rice and soy milk to a simmer
- Add brown rice syrup, maple syrup, raisins, salt and simmer for 5 minutes
- Add lemon peel and miso, simmer for 2 minutes while stirring
- Serve warm
